Piadine with hummus, beans, dried tomatoes and aubergines

Instructions

For the piadine

Step 1
Knead all ingredients together until the surface is smooth
Step 2
Let the dough rest for 15 to 30 minutes
Step 3
Cut the dough in 6 or 8 pieces of equal weight
Step 4
Flatten each piece with a rolling pin, trying to give them a round shape. Use some flour so that the dough won't stick to the rolling pin or to the surface
Step 5
Heat a pan on medium to high heat and cook each piadina for 2/3 minutes on one side. Pay attention to flip them before they get burned and cook them on the other side, normally on the second side takes less time.

Cook the aubergines

Step 6
Cut the aubergines in thin stripes, mix then with salt and place them in a colander
Step 7
Leave the aubergines in the colander for minimum 30 minutes. This way they will lose some bitterness. Wash out the remaining salt afterwards.
Step 8
Grill the aubergines on low heat or steam them

Assemble the piadina

Step 9
Spread some hummus, add sliced dried tomatoes, the aubergines and the beans
Step 10
Roll the piadina like you would do with a burrito
