Instructions

Step 1
1. Boil the new potatoes in a pan of salted water until cooked all the way through.
Step 2
2. Place the pork chop between two sheets of greaseproof paper and bash it with a rolling pin to flatten it out to a thickness of about 5mm.
Step 3
Place the flour and some seasoning in one bowl, the beaten egg in another bowl, and the breadcrumbs and some seasoning in a third bowl.
Step 4
Season the pork then dust it with the flour, dip it in the beaten egg and cover in the seasoned breadcrumbs.
Step 5
Pan-fry the schnitzel over low heat in splash of olive oil, until the breadcrumbs are golden and the pork is cooked all the way through.
Step 6
When the potatoes are cooked and are still hot, slice them and mix them with the red onion, adding a squeeze of lemon juice, and serve alongside the schnitzel.
