Instructions
Step 1
Fry the canned tuna in some oil with frozen sweetcorn and add all the spices
Step 2
Once the sweetcorn softens and tuna starts to turn a lil brown, add sundried tomato pesto. You can also use tomato puree as an alternative or ketchup
Step 3
Toast the bagel, add sauces to the bagel, add tuna mix, add shredded lettuce and thinly sliced cucumbers along with jalapeños
Step 4
The mixture is enough for 4 bagels. I made 2 and refrigerated the rest for next days lunch but you can just mix chopped tomatoes, red onions, lettuce, cucumber and add a splash of lemon juice and have it alongside the bagel as a tuna salad. You can also add any crisps of choice for added crunch and flavour
