Sausage Sandwich with Peppers, Onions & Mozzarella

I usually do this one in my Ninja Foodi Cooker but it can be done on the stove!

Instructions

Step 1
Set Ninja Cooker to Saute on medium heat and add 2 tsp of oil
Step 2
Wash and dry bell peppers. Seed and slice into thin strips
Step 3
Peel and mince garlic. Peel and thinly slice onion into half rings
Step 4
Add to the Ninja cooker and sautee for 2-3 minutes
Step 5
Pour tomato sauce into the Cooker; add spices and stir to combine for another 2-3 minutes
Step 6
assemble the Deluxe Cooker rack and place your sausages closer to the sides of the top rack and place inside the cooker.
Step 7
close Cooker lid and set to Bake/roast at 400F for 10minutes or until cooked through.
Step 8
Meanwhile Grate cheese.
Step 9
When the sausages are done remove from cooker and let cool

Toast your rolls

Meanwhile, slice sausages in half crosswise.
Step 12
To assemble Sprinkle the bottoms with half of the cheese. Divide veggies, sauce, and sausages between the rolls and top with remaining cheese.
Step 13
Close sandwiches and divide between plates. Enjoy!
