30mlolive oil
0.5red onion
1clove garlic
5Champignons
½ tspsalt
¼ tsppepper
1 stemrosemary
1 tsptomato paste
15gbutter
50mlwhite wine
50mlheavy cream
50mlvegetable broth

Instructions
Chicken
Step 1
Cut the chicken into stripes
Step 2
Heat the oil in the pan. Leave the heat on high. Add the chicken and fry for about 1 minute. Then season with salt, pepper and thyme. Fry for another 3 minutes and remove the chicken.
Mushroom sauce
Step 3
Chop the onion and garlic, slice the mushrooms.
Step 4
To the same pan add the olive oil. Reduce the heat to medium. Then add the onion. Fry for minute. Then add the garlic. Fry for another minute. Then add the mushrooms. Fry for about 3minutes.
Step 5
Season with salt and pepper. Add the tomato paste. Mix until well combined.
Step 6
Pure in the white wine. Let it reduce for 2 minutes. Then add the butter and rosemary. Fry for 2minutes.
Step 7
Pure in the heavy cream and let simmer for 2minutes. Finally pure in the vegetable broth. Let it simmer for another 8 minutes.
Sandwich
Step 8
Cut the bread in half. Spread both sides with butter. Toast until golden brown.
Step 9
Spread the bottom half of the bread with the blackberry jam.
Step 10
Then top it with the chicken and mushroom sauce.
Step 11
Stack the other bread half on top and enjoy!
