Instructions

Step 1
Combine first 5 ingredients in a large bowl; make a well in center of mixture.
Step 2
Combine remaining ingredients; add to dry mixture, stirring until moistened.
Step 3
Pour batter into a greased 9 × 5 x3
Step 4
Bake at 350° for 45 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan, and let cool on wire rack
Step 5
Banana Muffins: Spoon batter into greased muffin pans, filling three-fourths full. Bake at 400° for 18 minutes or until golden brown. Remove from pans immediately. Yield: 1½ dozen.
Step 6
Mini muffins: 350 for 12 minutes. Yield: 3 1/2 dozen
