Summer BLT Sandwiches

Summer is the perfect time for a toasted sandwich like BLT. You can alter and add, keep it simple with just the juiciest of tomatoes, a little salt and pepper and a smear of mayo. Or you can load it up with grilled veggies, garden cucumbers, any variety of fresh greens. There are so many wonderful fresh veggies available in the months ahead you can really enjoy a different sandwich every time. Switch up bread for wrap, pitas and rolls for even more variety.
Remember tomatoes store at room temperature and always need salt and pepper to bring out the very best of their flavour.

Instructions
Step 1
Layer lightly toasted sliced bread with mayonnaise, lettuce, bacon and tomatoes.
Step 2
Top tomatoes with salt and pepper and a sprinkling of fresh herbs.
Step 3
Finish with mayo on the top slice. Close and cut sandwiches on the diagonal (sandwiches always taste better cut on the diagonal)
