Step 1
Pressure cook the potatoes with enough water for 4-5 whistles and remove from the heat. Peel off the skin and mash potatoes. Heat oil in a kadhai and add mustard seeds & cumin seeds.
Step 2
Add mashed potatoes, ginger-garlic paste, turmeric powder, red chili powder, garam masala, hing and salt to taste. Cook for 5 mins and switch off the flame.
Step 3
Keep the capsicums ready for the filling. Cut the stem of capsicum and remove the seeds. Take the potato filling and stuff the capsicum. Heat enough oil in a flat bottomed pan and shallow fry the stuffed peppers till they get cooked well from all the sides. Serve with roti.
