Step 1
Dress 6 oz [180 g] of spinach (or a couple of handfuls per person) with 1/4 cup [60 ml] of Anchovy Vinaigrette (page 35), 2 hard-cooked eggs (cut into rounds or grated on the largest tooth of a box grater), and several grinds of black pepper. To serve, sprinkle 1/4 cup [50 g] of cooked wheat berries all over the top.
