Step 1
Heat olive oil over medium heat in a large pot. Add onions and cook about 4 mins, stirring often, until onions are soft

Add water, carrots, ginger, and apple cider vinegar. Cover and wait until it boils. Reduce the heat and simmer for about 30 mins or until carrots are soft.
