Instructions
Step 1
Begin by finely slicing the garlic and chilli pepper
Step 2
Next add the olive oil to a pan on medium-low heat
Step 3
In a pot with boiling salted water add the pasta and cook 2 minutes less than instructions on packaging
Step 4
Once shimmering, add the sliced garlic, season with salt and cook until slightly blond
Step 5
Next, add the chilli pepper + fresh cracked black pepper to the garlic and toast for 1 minute
Step 6
Save a large cup of the pasta water and drain the pasta
Step 7
Pour half the cup of pasta water into the pan with the garlic and oil and let it bubble for 30 seconds.
Step 8
Next, add the pasta and begin tossing vigorously. Add more pasta water as necessary. We want the oil and water too emulsify into a creamy sauce
Step 9
Once emulsified, remove from the heat and squeeze half a lemon along with the chopped parsley. Continue to mix vigorously and season with more lemon, salt and pepper to taste
Step 10
Finally plate and finish with a drizzle of good quality extra virgin olive oil
