An unusual soup and a great way to use up leftovers from your Sunday roast, this chicken, rice and veg soup makes a substantial supper. This recipe makes a big quantity so be sure to have lots of hungry mouths around the table!

Instructions

Step 1
Put your stock in a large heavy based soup pot

Heat gently on a medium heat

Add pudding rice, grated carrot and finely chopped onion

Add chopped chicken breast and stir well

Cover and cook on low/medium heat for about 60 minutes stirring occasionally

Add salt and pepper to taste
