Ingredients
12 servings
1rotisserie chicken
shredded
1 canlow sodium black beans
drained and rinsed
2 canslow sodium diced tomatoes
one drained one not
1yellow onion
medium, chopped
1jalapeno
chopped or poblano
1 packetlow sodium taco seasoning
cooking spray
or drizzle of vegetable olive oil

Instructions
Step 1
Spray non stick pan with cooking spray or drizzle with oil and cooked chopped onions and pepper over medium heat until soft
Step 2
Add in tomatoes (one can drained and the other with retained liquid) along with contents of the taco seasoning packet. Simmer for 5-10 min
Step 3
Stir in shredded chicken and can of beans and simmer for an additional 5-10 minutes or until everything is heated thoroughly.
Step 4
Serve your chicken mixture over your favorite tortilla chips or using taco shells, soft tacos, rice or even lettuce leave. Garnish with cheese, lettuce and a drizzle of ranch dressing.
