Step 1
-In a medium bowl, place the smashed sour cream and onion potato chips, half the chives and the olive oil
-Place a large pot of salted water on the stove, then peel your potatoes, cut into large chunks and simmer them until they are tender all the way through. Strain and place back into the pot.
-Add the remaining ingredients, season with salt and pepper, and mix. If you prefer a smooth mash, you can place into a kitchen ad use a paddle to create a smooth mixture. If you prefer a chunky mixture, just use a spoon or spatula to combine.
-Place the potato mixture into an appropriate sized baking dish, then evenly top with the chip topping.
-Bake at 375* for 15-20 minutes, or until hot all the ay through and the topping is nicely browned.
-This could also be made the day before, just bake the dish covered with foil at 325*F for 30 minutes, then remove the top and continue to bake until hot and browned well.
