Yam and Red Lentil Soup

Ingredients

1onion
small, chopped
1yam
large, Garnet, diced into 1 inch squares or spiralized
1 cupred lentils
2 tablespoonsbutter
or olive oil
2 teaspoonssalt
1 teaspoonHerbs de Province
32 ozchicken broth
5 cupswater
½ cupheavy cream
Garnish (optional)
Instructions
Step 1
Sautee onion in butter at the bottom of soup pot until translucent (about 5 minutes)
Step 2
Add salt and Herbs de Province (1 minute), stirring to bloom
Step 3
Add chicken broth and water. Bring to a boil.
Step 4
Add diced yams and lentils. Simmer for 30-45 minutes until yams are soft.
Step 5
Puree soup with immersion blender (or other appliance)
Step 6
Add heavy cream and stir. until soup is fully reheated (don't let cream boil)
Step 7
Serve and garnish with sour cream/yogurt and chives/onions
