Step 1
Combine flour and baking soda ins medium sized bowl.

2. In the stand mixer, cream the butter, brown sugar, white sugar until smooth.

Beat in the egg and vanilla until light and fluffy. Gradually blend in the flour mixture, then mix in the coconut flakes. Drop the dough by teaspoonfuls onto a cookie sheet lined with parchment paper. Cookies should be about inches apart.
