Deb's KETO Turkey Sausage Egg Spinach Cups

Filling, extremely flavorful with a bit of spiciness, and they are KETO friendly! These quick to make breakfast or snack cups will surely be one of your favorite on-the-go meals. These turkey spinach egg cups last in the refrigerator for several days, and freeze beautifully as well, so feel free to double the recipe. If you aren't into foods with a bit of spicy kick, omit the red pepper flakes.

Instructions

Step 1
• Preheat oven to 375 degrees while you prepare the remaining ingredients.
Step 2
• Butter muffin cups (even silicone ones) for easy release after cooking
Step 3
• Place muffin pan on baking sheet to protect oven from spillage and for ease of handling if using silicone muffin tray.
Step 4
• Combine seasonings and almond flour together in small bowl, mixing well; add to sausage. Mix sausage mixture together well using firm rubber spatula or your hands. Make sure all spices are incorporated with no spots of seasoning mix.
Step 5
• Divide sausage evenly between the 12 cups, then shape into cups on bottom and up the sides of muffin cup, trying to maintain an even thickness. Avoid leaving any holes.
Step 6
• Add eggs and all egg ingredients into medium bowl and beat with fork or egg blender until light and fluffy. Carefully pour egg mixture into each cup leaving about 1/8 to ¼ inch clearance.
Step 7
• Top each egg cup with julienned baby spinach leaves, dividing evenly.
Step 8
• Top spinach with gouda cheese strips, dividing evenly amongst the 12 cups.
Step 9
• Place in oven and bake for 20-25 minutes (do not let eggs overcook, as they will continue cooking when removed from the oven).
Step 10
• Let pan sit on stovetop or cooling rack for 5 minutes to allow solidification before removing from pan after running around edge with a knife to loosen from baking cup.
Step 11
• Serve two per person with sliced avocado and/or strawberries or other KETO approved fruit for fiber and other required macronutrients.
