Instructions

CRUST

Step 1
With rack in middle of oven, preheat to 350°F. Butter 8" square pan and line with parchment paper

Step 2
In bowl, combine all ingredients until mixture becomes like wet sand. Lightly press into pan. Bake for 15 minutes and let cool.

FILLING

Step 3
Combine sugar and cornstarch. Whisk in eggs. Stir in mango puree and lemon juice. Pour on top of crust.

Step 4
Bake 20 minutes or until center is set. Cool on metal rack. Cover with plastic wrap on surface of filling and refrigerate for 2 hours. Un-mold and cut into squares.

blend 2 cups cubed mango and strain for 1 cup
