Molletes
Molletes are basically open face bean and cheese sandwiches served with pico de gallo. Made with staple ingredients jn my fridge and pantry. Can be eaten at breakfast, lunch, or dinner. Traditionally served with white rolls called bolillos, but served here with quality white bread which is just as tasty!

Ingredients

8slices crusty bread
thick
2 cupsseasoned refried beans
1 T coriander, 1 T cumin, 1 chopped chipotle in adobo, cilantro, splash of water
16 ouncesmozzarella cheese shredded
¼ cupfresh cilantro
finely chopped
pico de gallo
Instructions
Step 1
Heat the broiler with a rack about six inches from the element. Arrange the bread in a single layer on the baking sheet and brush the tops with butter. Broil until the bread is golden brown, three to five minutes. Flip each slice and broil until the second sides are golden brown, one to two minutes. Remove from the broiler.
Step 2
Flip each slice once again. Spread 1/4 cup bean puree on each slice, then top each with some of the cheese (1/2 cup) dividing it evenly. Broil until the cheese is melted and begins to brown, four to six minutes. Transfer the baking sheet to a wire rack and cool for five minutes. Sprinkle with cilantro, then transfer to a platter. Serve with pico de gallo.
Step 3
Pico de gallo: 1 pint chopped cherry tomatoes, 1/4 cup onion chopped, 1/2 jalapeño chopped, 1/4 cup chopped cilantro, 2 T lime juice, salt and pepper to taste)
