Instructions
Step 1
Bring a pot of water to the boil. Add the linguine andcook for 10-12 minutes or as per packet instructions.
Step 2
Meanwhile, heat the rapeseed oil in a non-stick panand fry the onion for 3-4 minutes.
Step 3
Add the garlic, chicken, oregano and a pinch of salt. Cook on a medium heat for 5 minutes.
Step 4
When the pasta is cooked, strain it and leave it to the side.
Step 5
Next, add the red pepper, mushrooms and asparagus to your pan. Cook for 5 minutes, until soft.
Step 6
Mix in the sun-dried tomatoes and garden peas and leave to cook for 10 minutes.
Step 7
Add the pasta, tomato pur?e and Greek yoghurt to the pan and mix well.
Step 8
Season with a little salt and pepper, grate the parmesan over the pasta and serve.
