Roasted Eggplant with Tahini Sauce

Instructions

Step 1
Combine tahini dressing ingredients in a medium bowl, and set aside.
Step 2
Preheat the broiler and lightly oil a baking sheet.
Step 3
Brush 1tbsp oil on both sides of the eggplant slices and broil the eggplant 5 minutes each sides.
Step 4
Place eggplant on a plate, and drizzle tahini dressing over the eggplant. Sprinkle the pomegranate seeds and fresh dill over the eggplant.
