Ingredients

1 lbwhite fish
I used Alaskan Rockfish, which was delicious, but you can definitely use cod or halibut
Cajun Seasoning
enough to coat fish
⅓ cupvegetable oil
4 cupspineapple
ripe, diced
1 cupred bell pepper
diced
1 cupred onion
diced
½ cupjalapeño
diced
2limes juiced
fresh
1 cupcilantro
chopped
1 tspcayenne pepper
for added heat

Instructions
Step 1
Heat vegetable oil or another high smoke point oil in skillet.
Step 2
Pat filets dry with a paper town and add a generous amount of Cajun seasoning to both sides.
Step 3
Cook filets until you can see they begin to flake, about 2 min. on each side and set aside.
Step 4
To make your Salsa add 4 cups ripe pineapple, diced or 1 whole pineapple to a large bowl.

1 cup diced red bell pepper

1 cup red onion, diced

1/2 cup or one large jalapeño, diced

2 fresh limes, juiced

1 cup cilantro chopped

Optional: 1-2 tsp cayenne pepper for added heat

Lightly fry up corn tortillas by browning each side and then folding over to form a taco shell.
Step 12
Garnish with avocado radishes and lime juice.
