Instructions
Step 1
Cook the chicken: Bake, grill or fry your chicken. Shred or chop it when cooked.
Step 2
Cook the quinoa: Place the rinsed quinoa into a saucepan, adding 2 cups of waters for every 1 cup of dry quinoa.
Step 3
Add in a tablespoon of butter, cover the saucepan and bring to a boil.
Step 4
Once boiling, turn the heat back down low and simmer for 15-20 minutes until tender.
Step 5
If there is still excess water in the saucepan, take the lid off until the water evaporates.
Step 6
Once cooked, let the quinoa sit with the lid on for 5-10 minutes to let the quinoa dry out and become light and fluffy.
Step 7
Fluff with a fork and set aside to cool.
Step 8
Prepare the roll filling: Squeeze as much moisture as you can from the grated cucumber and place in a bowl with the mashed avocado.
Step 9
Add in the grated carrot, herbs, chia seeds and chicken. Mix together.
Step 10
Add in the cooled quinoa and pour in the rice vinegar.
Step 11
Season with some salt and pepper, stir to combine.
Step 12
Divide into 8 equal portions.
Step 13
Assemble the rolls: Fill a large, shallow bowl with warm water.
Step 14
Dip each wrapper, one at a time into the water to soften for about 20 seconds (or as per instructions on packet).
Step 15
Place the softened wrapper onto a damp tea towel laid flat on your bench.
Step 16
Spread one portion of the mixture in a straight line across the center of the wrapper, leaving room at each end for the wrapper to fold up.
Step 17
Fold one long edge of the roll over the filling, fold the ends inwards, and then gently roll the rest up tightly to enclose the filling.
Step 18
Repeat process until all rolls have been made.
Step 19
Serve with tamari or Asian Dipping Sauce.
