Instructions

Step 1
Wash all produce. Then chop all veggies into small pieces. finely dice herbs. Place into 1 bowl and refrigerate.
Step 2
Pat chicken dry, butterfly breast if more than 1/2 in thick. Season however you'd like (chicken blend, Cajun blend, lemon pepper blend). Heat oil in a pan and cook chicken until done (165 degrees)
Step 3
While the chicken is cooking, make the quinoa according to package instructions and set aside to cool
Step 4
Make dressing by whisking 8 oz hummus, olive oil, lemon juice, salt and pepper together.
Step 5
Cut chicken into small cubes once cooled.
Step 6
Combine everything in the bowl the veggies are in and stir.
