Green poblano sauce is a mixture of green salsa and pesto. The poblano adds a smokey subtle spice and the pumpkin seeds offer texture and crunch. This sauce does not have a ton of ingredients but the layering of pepper, cilantro, pumpkin seeds, lime, and coriander seeds gives this recipe a nice depth of flavor. Use this sauce on tacos, burritos, quesadillas, nachos, bowls, soups, and even salads.

Instructions

Step 1
Heat ½ Tbsp of olive oil over medium heat and saute the poblano until soft; about 5 minutes
Step 2
Place the poblano and the remaining ingredients in a food processor

Pulse until the sauce is combined but not completely smooth. You want to keep some texture
Step 4
Taste for additional seasoning
Step 5
Serve on tacos, burritos, enchiladas, quesadillas, etc.
