Bucatini alla Amatriciana

This is bucatini alla amatriciana with a twist! Using some meats different than pancetta adds a kick of flavour!

Instructions

Step 1
Slice the three different deli meats into 1/4 inch strips and heat the olive oil on medium heat in a large fry pan. Add the meat to the pan and stir occasionally while the meat gets nice and crispy. After about 5-7 mins, remove the meat from teh fry pan and place in a bowl with a piece of paper towel in it to collect the extra grease and set to the side.

After the meat has been removed, press the garlic directly into the pan and cook for a minute, until aromatic.

Add tomatoes to the pan and mix well. If you are using pre diced tomatoes, pour directly into the pan. If you bought whole tomatoes, pour into a bowl and crush by hand before pouring into the frying pan.

Add the red wine, red pepper flakes, sugar & pepper into the pan. I would wait to add salt until the end, as using the 3 different deli meats does provide enough salt for myself for the dish! Bring to a boil then reduce to a simmer, stirring occasionally. Let simmer on low for 45 mins. Feel free to add some grated parmesan to the sauce while it's simmering! If the sauce is thickening fast, just lower the heat.

When you have approx 10 mins left on the sauce, bring a pot of salted water to a boil for your pasta. After the water is boiling, add your bucatini to the pot and a dash of olive oil and stir and cook the pasta until al dente. The brand of bucatini I use takes about 9 mins for al dente.
Step 6
Strain pasta and reserve 1/2 cup of pasta water and add that to the sauce. After giving the colander a couple good shakes, remove the sauce from heat add the bucatini to the fry pan as well and give a good stir.
Step 7
Place the sauced pasta into bowls and garnish with the deli meats and as much parmesan as you want then enjoy!!
