Lisa's Creamy Pear Vinaigrette Salad Dressing

I like this mild, creamy dressing served over fresh mixed greens with toasted almonds or pistachios and a light sprinkling of cheese.
Because pears have such a delicate flavor, I've found that simply using pureed pears along with a more generic mild vinegar (such as rice vinegar) is insufficient to make the pear flavor come through. That's why this recipe uses both pureed pears and pear vinegar together. It's really not overkill!
The luxurious creaminess comes from both pureeing the pears and emulsifying the oil. It does NOT come from cream or other things high in saturated fat.
All salad dressings should be used in moderation. This one contains no added sugars or artificial sweeteners. It's sweetened mostly by the fruit, with just a hint of stevia--not enough to create a big aftertaste.
The salt content is quite moderate. So if you're watching your salt, you can enjoy it with less guilt! If you have no medical reason for limiting your salt intake, I recommend adding up to 50% more salt than the recipe says.
One serving = 2 Tb.

Step 1
Rinse the canned pears in a strainer. Then weigh out the amount you need, refrigerating any extra. Put the pears you’re using in a blender or food processor, along with the pear vinegar, stevia powder, and salt.
Step 2
With the blender or food processor running on low, drizzle the oil in slowly to emulsify it for a creamier texture.
Step 3
Bottle and refrigerate the dressing until ready to use. Tip: If you have leftover canned pears, chop them and add them to your salad!
