Step 1
Dissolve packet of yeasts in 50ml of lukewarm water and let it stand for 10-20 minutes, make sure you see some bubbles on the surface.

Combine together both flours, salt and spices in a large bowl.

Add water and yeast to the flour mixture, then add molasses and mix everything well until it's a homogeneous sticky dough.
Step 4
Pre-heat oven to the lowest temperature allowed. Mine's 170F. Turn it off once it gets to this temperature, and open the door to cool it down to about 200F. Cover dough bowl with towel and put it in the oven with the door ajar. Let it sit for about an hour. Dough will double in size.

Cover bowl with saran wrap and put it in the fridge overnight for about 8-12 hours.
Step 6
Take the dough out at least an hour before baking. Pre-heat oven with cast iron dutch oven inside to 450F.
Step 7
Sprinkle flour on the table and take the dough out of the bowl. Gently fold in the dough towards inside couple times. Springlike some flour onto baking parchment paper and transfer the dough upside down onto it hiding the folds on the bottom. Transfer parchment paper with the dough into dutch oven. Cut criss-cross pattern on top of the bread 1/2 inch deep using a blade. Cover with lid. Bake at 450F for 30 minutes with lid on, then bake for 12 minutes at the same temperature without the lid. After it's done baking, take out the bread and let it rest on the counter top for at least 30 minutes before serving it.
