Lemon Pepper Pork Masitas
Do you like tender, moist, crispy pieces of bite sized meat? Well say hello to my little friends and definitely save this recipe so you can make them. Inspired by one of my favorite Cuban restaurants (Cuban Breeze) but I took a back road and decided to make these a little nontraditionally. Marinaded, instant potted to tenderness, and then air fried to crispy lemon peppery perfection!!

Instructions
Step 1
1.) Cut 1.5 lb of pork (I used pork loin) into 1-1.5 inch cubes and transfer to a bowl for marinading.
Step 2
2.) Juice 2 lemons right on top (try not to get any seeds in there).
Step 3
3.) Add 3 tbsp of olive oil, 1 tbsp garlic powder, 2 tsp black pepper, 5 cloves of roughly chopped garlic, and 1 tbsp of hot honey on top of your pork and mix so that each piece is covered in the marinade.

4.) Cover your bowl with plastic wrap or a lid and leave in the fridge to marinade for at least 2 hrs but overnight is preferred.

5.) Add pork and marinade directly into your instant pot.
Step 6
6.) In the instant pot, on top of the pork add one cup of water and 1 tsp of chicken bouillon. You can sub with one cup of chicken broth/stock here as well. You want the meat to be slightly submerged in the liquid to ensure it isn’t dried out during the cooking process.
Step 7
7.) Cook on high pressure for 11 min. Allow the pressure to naturally release for 10 min once cook time ends before manually removing the rest and then removing the lid.
Step 8
8.) Using tongs remove each pork nugget and place on a plate lined with a paper towel. Lightly pat each piece dry using another paper towel.
Step 9
9.) In a small bowl combine 3 tbsp of olive oil with 1.5 tbsp of Kinder’s Lemon Pepper Seasoning and 1 tbsp of garlic powder. Mix and baste mixture on top of each dried pork nugget making sure they are completely coated.
Step 10
10.) Place in air fryer making sure to leave a little bit of space inbetween each piece.
Step 11
11.) Cook at 400 for 8 to 10 min or until golden brown and beautiful.
