🐟 Tuna Pasta with Fresh Cherry Tomato Sauce

One more simple and indulgent pasta with fresh cherry tomato sauce for a busy week or lazy weekend. This pasta is my go-to if I have a stock-up on tuna cans and want to eat something besides a salad or a sandwich. Fresh cherry tomato sauce is a great alternative to the regular one. It has a much fresher and slightly sweet flavor. And good thing it is done in less than 15 minutes. 🐟 Feel free to use more cherry tomatoes, tuna, or garlic to your taste. 🐟 As an option, you may fry the drained tuna with onion and garlic. Instructions

Step 1
Bring a large pan of water to the boil. Salt, when it boils, and cook pasta according to the package instructions.

Peel and finely dice 1/2 medium onion, then mince 1 clove of garlic.

Cut fresh cherry tomatoes in halves.

Chop up fresh parsley.

Drain 1 tuna can from water or oil. Smash the tuna piece with a fork.

In a frying pan, add the chopped onion and garlic. Cook on 4 tbsp olive oil until soft.

Add the tomatoes, salt, pepper, and a few basil leaves. Cook on medium-low or low heat. After a few minutes, the tomatoes collapse and start thickening slightly. It should take about 7-10 minutes.

Once the sauce is done, add the tuna, the drained pasta, chopped parsley, and pasta water (as needed). On high heat, mix well and toss coating the pasta with the sauce.
