Instructions
Step 1
Cook pasta in 2 quarts of water according to package instructions. Save 2 cups of pasta cooking water and drain the rest. Set aside.

Cook ground italian sausage in 2 tablespoons of olive oil until brown. Remove from pan and set aside.

Step 3
Add 2 more tablespoons of olive oil, minced onions, and minced garlic to pan. Cook until onions are translucent.

Step 4
Add 1/2 cup pasta cooking water, spinach, and tomatoes to pan. Cook until spinach is wilted, about 1 minute.

Step 5
Add cooked sausage, pasta, and 1/2 cup pasta cooking water. Turn heat to low, add parmesan a handful at a time and mix until a creamy sauce is formed.
