Instructions

Step 1
Tip - if you don't have all the spices, just use 2 tbsp of curry powder instead!
Step 2
Bring basmati rice to boil and simmer while the curry is cooking.
Step 3
In a large pan, heat the coconut oil and gently fry chopped onion and garlic for about 5 minutes.
Step 4
Then, add all the spices for another 1-2 minutes, followed by the diced chicken and chopped sweet potato.
Step 5
Cook until the chicken starts to brown and everything is coated with the spices. Pour in chicken broth and continue to cook for at least 10-15 minutes or until the chicken is cooked through and the sweet potato is soft.
Step 6
Before serving, remove bay leaf and stir in coconut milk. Serve beside basmati rice with a generous squeeze of lime juice on top and a few basil leaves
