Super Easy 10 Minute cauliflower Gnocchi Marinara
A low carb, gluten free take on a traditional fave! The addition of spinach and chicken makes this meal a guilt free, macro friendly lunch or dinner. The dish works great with ground turkey, ground beef, or mushrooms. DO NOT...I preapeat...DO NOT boil cauliflower gnocchi! If you cook often you may be tempted to prepare it like regular gnocchi. DO NOT DO THIS! If you boil it it will become a sticky vegetabley mess. DON'T BOIL IT!!

2 packagescauliflower gnocchi
you can make your own cauliflower gnocchi if you want, but I haven't been successful at it yet
2 Tbspolive oil
1 cupsugar free marinara sauce
1 handfulspinach
I could measure this but I'd rather you guys add spinach to your own taste

Instructions
Step 1
Heat Olive Oil in a large pan on medium high

Step 2
Put the gnocchi in the pan still frozen and arrange them in a single layer
Step 3
Allow the gnocchi to cook in the oil until they're golden brown on the bottom (3-4 minutes) and then flip them to the other side
Step 4
Once they're flipped, shake the pan every 30-40 seconds or so to keep them moving and sauté for another 3 minutes
Step 5
While the gnocchi is cooking, prepare whatever you're adding to it- shred the chicken measure out your handful of spinach, or cut up any veggies like mushrooms
Step 6
Add the spinach to the pan and stir to mix it in. Do the same with the chicken.
Step 7
Lastly, add the sugar free marinara to the pan and let it all simmer together for about 2 minutes. Stir so everything gets equally coated with the sauce.
Step 8
Optional: Serve with parmesan cheese on top
