This recipe is from a 1978 cookbook made to celebrate the Centennial anniversary of St. Augustine Church in Schuyler, Nebraska. It’s a compilation of recipes submitted by women of the church. This particular recipe was submitted by Kak Chronister and can be found on page 162. The recipe calls for Hellman’s brand mayonnaise, and Longhorn cheese can be substituted with ordinary Colby.

Step 1
Boil chicken until tender. Grease baking dish. Line with cooked broccoli spears, cover with chicken breasts that have been skinned and bones removed.

Cover with mixture of cream of chicken soup, mayonnaise, lemon juice and curry powder.

Bake 30 minutes at 350° F. (May be frozen before cooking.)
