Ingredients

33 fl ozstarter
you may use kefir to activate the starter
1 Ltwater
warm
1kgrye flour
4 Tbspsugar
1 Tbspsalt
100gbread syrup
or treacle
4 Tbspmalted flour
The one I have is light coloured
1 Tbspcoriander powder

Instructions
Step 1
In a bowl, dilute the starter with the water.
Then keep adding half the rye flour while mixing with a spoon to a fairly liquid solution. Cover and let stand overnight.
Step 2
Now add the sugar and salt. Bread syrup (I used treacle), cumin, caraway, and coriander and mix well. It'll be easy since it's almost liquid Add the flour in blending it well before adding more until it becomes a heavy sticky dough.
Step 3
Prepare the loaf pan and half fill it. Cover and let it rest for 2 hours or until it doubles the size.
Step 4
Preheat the oven to 250ºC. Wet the bread, place it in the oven, pour water in the preheated baking tin, close the oven and REDUCE TO 200ºC.

Step 5
Bake for 40 min. Check bread inner temperature is 98ºC. Get it out of the loaf pan and set it to cool completely before attacking it with the knife.
