Ingredients

1 headbroccoli
finely chopped, florets only
1carrot
grated
1beetroot
cooked, chopped
0.5avocado
sliced
1red onion
small, finely sliced
0.5 x 400 Gchickpeas
can, drained and rinsed
1 cupquinoa
cooked
25galmonds
roughly chopped
20gpumpkin seeds
fresh mint leaves
finely chopped
fresh coriander
finely chopped
2 Tbspextra virgin olive oil
1 tspDijon mustard
1 tspapple cider vinegar
1 tspmaple syrup
lemon
salt
to taste
pepper
to taste
Instructions
Step 1
Add the almonds and pumpkin seeds to a dry pan. Toast them for 5 minutes until fragrant.
Step 2
Chop the broccoli florets very finely. Add it to a bowl together with the grated carrot, avocado, beetroot, red onion, chickpeas and quinoa.
Step 3
Add all the dressing ingredients into a bowl and mix. Add the chopped herbs and mix again. Add the toasted nuts to a salad and mix everything together. Enjoy!
