Preheat oven to 450*
Step 2
Heat olive oil and saute minced garlic until golden brown. Strain the garlic from th oil set BOTH garlic and oil aside.

2. Gut potatoes into 1/4 inch julienne strips, place in large bowl and toss with oil and salt. Place parchment paper on large baking sheet. Spread the potatoes on it in a single layer. Bake until golden crisp. 20 - 25 minutes.
Step 4
3. Toss the potatoes on the baking sheet with toasted garlic and parsley.
