Instructions
Step 1
In large, 15 to 18 in skillet, Add 2 lbs meat to brown
Step 2
Add diced onion and taco seasoning, cook until onions are clear
Step 3
Make a small well in middle of mixture, drizzle oil and put rice to brown to 5 to 8 minutes
Step 4
Add tomato sauce, rotel, and garlic, mix well and bring to simmer
Step 5
Add beef broth, bring to simmer making sure all rice is submerged before covering with lid. Mix after 10 minutes making sure to have rice submerged again then cook for additional 10 minutes.
Step 6
Remove from heat, remove lid and make sure thoroughly mixed.
Step 7
Add cheddar to the top and put in the oven at 350 to melt cheddar. You don't want brown spots. Just melt about 6 to 10 minutes
Step 8
Remove from oven and top with pico de gallo.
Step 9
Serve with chips and sour cream. Leftovers can be used for tacos or burritos.
