The Dough
300gstrong bread flour
¼ tspsalt
½ tspnigella seeds
2 Tbspolive oil
150mlwater
room temp
½ tspyeast
½ tspsugar

The Dough
Step 1
Mix the yeast with the water and sugar and let sit for 10 minutes
Step 2
Mix the flour with the salt, nigella seeds, and 1 tbsp olive oil
Step 3
Add the wet to the dry, combine and knead for 10 minutes
Step 4
Add 1 tbsp oil to a bowl, sit the dough in and cover with cling film, then rest in the fridge overnight or room temp for 2 hours.
Step 5
Separate into 2 and form in balls, cover and rest for an hour at room temp.
Step 6
Roll one of the balls into a disk the size of your biggest pan, and cut the other into 18-24 pieces.

Grate 75g cheese and cut the other 100g into 18-24 chunks - the number of “cheesy bites” you want.
Step 8
Lay the pizza sauce, grated mozzarella and pepperoni on the disk, leaving a 2 cm run around the outside
Step 9
Roll up your small pieces of dough around the mozzarella pieces, and lay around the outside of the pizza, pressing into the dough .
Step 10
Melt the butter and add the garlic, parmesan, and parsley. Brush this over the crust.
Step 11
Lay the pizza into a hot pan and cook for 3-5 minutes, before putting under a grill/broiler for 3-4 minutes.
Step 12
Serve with dipping sauce!
