Instructions

Step 1
Peel the garlic and grind until smooth in a pestle and mortar with a pinch of salt
Step 2
Add chilli flakes, paprika and olive oil and mix well
Step 3
Rub the garlic mix over the ribs in a baking dish, then refrigerate for 3-4 hours or overnight
Step 4
Cover with tinfoil, then cook at 160ºC for 2 1/2 – 3 hours until tender. Slice the pickles and finely dice the onion and set aside
Step 5
Make the glaze by mixing dark brown sugar, barbecue sauce, treacle and Guinness in a bowl, then stir in a pan on a medium heat until it begins to thicken and turn the oven up to 240ºC
Step 6
Pour the glaze over the ribs and brush to evenly coat. Return the ribs to the oven uncovered for 10 minutes. Remove the bones, slice and serve in the bloomer with onion, pickles and extra barbecue sauce and enjoy!
