Instructions

Step 1
Juice the limes and zest and juice 2 of the oranges into a blender
Step 2
Add in the Chillies, herbs, spices, and salt into the blender and blend until smooth
Step 3
Add the pork to a ziplock bag and tip in the marinade in

Slice the final orange into disks and add this into the bag.
Step 5
Press out all the air and seal, and leave in the fridge overnight then place on a tray, reserve the excess marinade in a bowl, and bake at 180C for 1 hour.
Step 6
Brush over the extra marinade and bake at 220C for one hour. Cooking times are approximate. If you have a meat thermometer, you want the internal temp to be around 68C when you bring it out the oven.
Step 7
Carve up and enjoy
