D'licious Caramel Pecan Ice Cream Pie

Instructions

Step 1
Preheat oven to 400 degrees.
Step 2
Line a metal baking sheet with parchment paper.
Step 3
In a large mixing bowl, place the flour, oats, brown sugar, salt, pecans, and margarine.
Step 4
Mix thoroughly.
Step 5
Spread mixture evenly on the prepared baking sheet and bake for 15 minutes.
Step 6
Cool, crumble, and set aside.
Step 7
To make the caramel sauce: Place almond butter and maple syrup in a small nonstick saucepan.
Step 8
Stir over medium heat until the mixture comes to gentle boil.
Step 9
Stir in the almond milk, brown sugar, and salt and continue mixing for about 5 minutes, stirring constantly and watching that it doesn't boil over.
Step 10
Remove from heat and add margarine.
Step 11
Mix well to melt and combine.
Step 12
To assemble the pie, press down half of the pecan crumble into a 9X13-inch baking pan.
Step 13
Drizzle over some of the caramel sauce.
Step 14
Top with softened ice cream.
Step 15
Cover with remaining crumble.
Step 16
Drizzle with more caramel sauce, reserving some for drizzling over the plate.

Cover and freeze for at least 2 hours before serving

NOTES: My favorite pareve ice creams are the ones made with oat milk, such as the Planet Oak and Oatly brands, since I find those to be the creamiest.
Step 19
Cashew milk ice cream would be a close second.

For an alternate serving suggestion: Top a scoop of ice cream with pecan crumble and a drizzle of caramel.
