One pot mac n cheese

Quick and easy one pot mac n cheese. We sometimes like to add spicy or smoky cheese in place of some of the cheddar as well as some smoked sausage. Makes 2 large portions or can easily be split into 3. Also, there is an insane amount of cheese in this recipe. Use less if you prefer.
