Ingredients

chicken breast
Palm size and thickness amount, cubed
0.5red pepper
large, chopped
0.5red onion
large, chopped
marinade
1 teaspoonextra virgin olive oil
1clove garlic
crushed
1 heaped teaspoonfull fat Greek yoghurt
¼ teaspoonpaprika
½ teaspoonmixed herbs
black pepper
fresh lemon juice
rocket
or mixed leaves
Baba Ganoush
Instructions
Step 1
Make your baba ganoush and refrigerate.
Step 2
Cube your chicken, red pepper and red onion big enough to go onto your skewer.
Step 3
Make your marinade by mixing your extra virgin olive oil, crushed garlic, full fat Greek yoghurt, paprika and mixed herbs together in a bowl.
Step 4
Add your chicken, pepper and onion to the marinade and mix thoroughly. Then cover and refrigerate overnight if possible, to really let that rich marinade soak in. Alternatively, if you can’t wait then just go for it.
Step 5
Thread the chicken, red pepper and red onion onto your skewer, season with black pepper and a squeeze of lemon. Place under your medium preheated grill turning frequently until cooked through.
Step 6
Serve your chicken shish with some fresh rocket leaves and an additional squeeze of lemon juice, accompanied by your baba ganoush.
