Soup Series Part 3. Korean Kimchi Soup (AKA Korean Kimchi Stew) is your ultimate comfort food this soup season!
There are so many ways to make this classic dish. In fact, I make it at least once every few weeks, slightly different every time, depending on my mood hehe. Here is a super easy, homestyle version. Enjoy!

Instructions
Step 1
Heat heavy-bottomed pot on medium heat. Add pork belly and sauté till golden & crispy. ( About 8-10 mins)
Step 2
Add onion. Sauté for 5 minutes. ( Optional: If time allowed, sauté 15 - 20 mins till onion is caramelized.)
Step 3
Add garlic. Sauté till fragrant. ( About 2 mins)
Step 4
Add kimchi, kimchi juice, the whole jar of tuna including water, & tofu.
Step 5
Turn up heat to medium high and bring pot to a boil.
Step 6
Cover and turn down heat. Simmer for 15 mins.
Step 7
Top with green onions. Enjoy!
Step 8
I decided not adding additional salt because the kimchi, kimchi juice, tuna and tuna water are all pretty salty. However, you can add a little if you prefer.
