Cinnamon Peach Banana Bread

Succulent fresh summer peaches combine with a low-fat moist banana bread made with Greek yogurt and a touch of cinnamon. Great served with peanut butter.

Ingredients

1 ¾ cupsall-purpose flour
1 tspbaking powder
¾ tspbaking soda
¼ tspsalt
1 tspcinnamon
plus extra for dusting
1 cupbanana
mashed
1 cuppeaches
finely diced, plus 8-10 slices for topping
½ cupdark brown sugar
packed, plus 2 tblsp for topping
2 tblspbutter
browned or melted, can also use coconut, olive, or canola oil
1egg
1 tspvanilla
⅓ cupGreek yogurt
nonfat plain or vanilla
Instructions
Step 1
Preheat oven to 350. Grease a 9-inch loaf pan.
Step 2
In a medium mixing bowl, combine flour, baking powder, baking soda, cinnamon, and salt. Set aside.
Step 3
In a large mixing bowl, whisk together mashed bananas, butter, 1/2 cup brown sugar until well combined.
Step 4
Add vanilla and egg and whisk again until well combined. Whisk in diced peaches.
Step 5
Add in dry ingredients and yogurt alternately, folding together until well combined.
Step 6
Pour batter into pan. Top with thinly sliced pieces and sprinkle 2 tblsps brown sugar over top. Dust lightly with cinnamon.
Step 7
Bake for 60-70 minutes or until toothpick comes out almost clean in center.
Step 8
Cool for 10 minutes in pan, then gently remove cake from pan and transfer to wire rack. Cool completely. Cut into thick slices and enjoy!
