This recipe is my take on the Sunnyside Pizza from the pizzeria Lola.

Ingredients

326gbread flour
14% gluten
½ Tbsphoney
1 ½ tspkosher salt
½ tspInstant Yeast
1 Tbspolive oil
210mlwater

2 TbspPecorino Romano
shredded
2 Tbspheavy whipping cream
4 ozleeks
white part, sliced and washed
3 ozbacon
sliced to small strips

Instructions

Step 1
Dissolve salt and honey in water. Combine all ingredients and make a slightly sticky, soft, and supple dough. Divide the dough into two portions. Form each into a ball, brush it with olive oil, and place it inside its zipped freezer bag. Keep for them 15-30 minutes at room temperature, then put in the refrigerator for at least 12 hours. Remove the balls from the fridge 2 hours before making pizza.

Step 2
Place baking stone or steel on the rack and preheat oven to 450F. Prepare other ingredients.
Step 3
Make one pizza at a time. Shape half of the dough on the counter and transfer to the peel dusted with semolina.
Step 4
Sprinkle the dough with half of the grated Pecorino Romano evenly.
Step 5
Combine leeks with heavy cream and arrange them evenly.
Step 6
Arrange small pieces of bacon on top evenly.
Step 7
Bake until pizza set, for about 3-4 minutes. Add 2 fresh eggs in the center, and bake for another 2 minutes or until whites are almost set.
Step 8
Sprinkle with freshly ground pepper. Cut through the egg yolks.
Step 9
Tilt pizza to let eggs run and slightly set on the surface of hot pizza. Serve hot.
