The Basics
Seasoning the Flesh
1 tablespoonsmoked paprika
regular paprika works as a substitute
1 tablespooncayenne pepper
2 teaspoonsgarlic powder
2 teaspoonsfreshly ground black pepper
1 teaspoonsground white pepper
Breading the Flesh
2 cupsall-purpose flour
2 tablespoonscornstarch
1 tablespoonhot sauce
I use Louisiana
1 cupwhole milk buttermilk
can be substituted but it makes the crunch a little softer
2egg whites

2 tablespoonsvodka
apple cider can be substituted
Blacksburg Hot Spices
Instructions
Flesh Prep
Step 1
Using a cutting board, cut the breasts into tender size cuts.
Step 2
Using a tablespoon of salt, season chicken and set aside for 30 minutes (or overnight in fridge)
Step 3
In a large bowl, combine the paprika, white pepper, black pepper, cayenne, and garlic powder. Use 2 tablespoons (about half) of the spice mixture and sprinkle directly onto the chicken pieces, patting it into the chicken as you go.

Breading the Flesh

Add the flour and cornstarch to the remaining spice mixture in the bowl and whisk well to combine. In a separate medium bowl, place the buttermilk, egg whites, hot sauce, and alcohol and whisk thoroughly to combine.

Use one hand for the wet mixture and one hand for the dry, take 1 piece of chicken at a time, toss in the flour mixture, shaking off excess, dip chicken in the buttermilk mixture to completely coat, then place back in the flour mixture. Toss as needed to completely coat the chicken, pressing into it with your fingers. Repeat with remaining chicken.
Step 6
Set aside at room temperature for at least 10 minutes
Frying the Flesh
Step 7
Setting the air fryer to 390, place chicken in and set timer for 13 minutes.
Step 8
After 13 minutes are up, take a light brush of oil on both sides of chicken and leave the other side flipped up. Finish cooking at 390 for 12 minutes.
Making the Blacksburg Hot Sauce!
Step 9
Heat oil on low (recommended using a sauce pan)

Whisk in seasonings, making sure the brown sugar fully dissolves. Test and add seasonings as you need

Dip the fried chicken in the sauce and place on white bread.

Top with pickles if you want and enjoy!
