Peanut Butter Pie
This is a different type of peanut butter pie. You put a peanut butter crumble in pie shell and then add a vanilla custard on top. Then top with meringue. 😋

Instructions
Step 1
Preheat oven to 400 degrees. Bake homemade or pre-made pie crust covered with tin foil then 8 more minutes without foil till lightly browned.
Step 2
Meanwhile in a small bowl mix powdered sugar and peanut butter till crumbly, set aside
Step 3
In a large heavy saucepan, combine the sugar, corn starch, flour and salt. Stir in milk till smooth. Cook and stir over medium high heat until thickened and bubbly, cook and stir 2 minutes. Remove from heat. Stir in small amount in eggs to temper and add to pot and cook and stir 2 more minutes.
Step 4
Remove from heat and add butter and vanilla.
Step 5
Sprinkle 1 cup peanut butter mixture over crust. Pour hot filling over top
Step 6
In large bowl, beat egg whites withva dash of cream of tartar until soft peaks form. Add sugar a tablespoon at a time till stiff peaks form.
Step 7
Spread meringue over pie and sprinkle with remaining crumbs and bake till lightly browned about 12 to 15 minutes.
Step 8
Cool on wire rack for an hour then chill for at least four hours before serving.
