This is one of my favourite soups and you can make it with things that u most probably have in the house already. Vegetarian,cheap, healthy and tasty 😍Just try it and tell me what u think.

For the rice balls
Instructions
Step 1
Chop the vegetables.
Step 2
In a pot fry the chopped peppers,1 onion and the carrots until soft.
Step 3
Add vegetable stock and water
Step 4
Add vermicelli (optional) and tomato paste
Step 5
In a pan fry the other chopped onion and mixe it with the cooked rice
Step 6
Add the condiments,egg,semolina and parsley
Step 7
Form rice balls and boil them in a separate pot
Step 8
Transfer them into the soup and cook for 10 min.Serve with fresh parsley.Enjoy!
